I have come through talks with my friends and people I met, and one thing that many of them said, when it comes to changing their lifestyle and diet and trying to eat healthy food, was the feeling of restriction and guiltiness. They immediately wanted to find the perfect diet and become very strict with their life. Their main focus was food and nothing else, to the point of obsession.
I have been there, too, and I can only say that it’s not the right way. We need to look at our health and well-being from a holistic perspective, and what it means for me now is to have the right mindset in everything I am doing for my body. I want to be sure that I am treating it the best way and not causing any stress to come and mess up. Restricting and feeling guilty after having a particular food can harm your body much more than if you would have this piece of chocolate but still enjoyed and felt happy and relaxed. Your body has impressive power and will handle this ideally once in a while.
Stress is associated with disturbed sleeping, memory, learning, and attention and can harm the immune and the cardiovascular system. Everything you need to make Gluten-free chocolate chip cookies at home
- Oat flour
- Coconut flour (almond works too)
- Baking powder & soda (I try to buy the best quality possible)
- Dark chocolate
- Almonds (toasted)
- Cane/ coconut sugar
- Rapeseed oil
- Soy dring (or any milk/ drink of choice)
- Cinnamon
- Gingerbread spice mix
- Salt
Is dark chocolate healthy?
First, dark chocolate means 100% dark chocolate without sugar, milk, and other fat additives. I often wondered, is it that bad for me to have even dark chocolate occasionally? Is it healthy at all? I asked myself these questions when I became more interested in a healthy diet. I love to have it sometimes, a piece of good quality dark chocolate daily. So today, I would love to share some science-based information about 100% dark chocolate (used in these chocolate chip cookies) and its benefits.
It contains several health-promoting factors (bioactive components – polyphenols, flavonoids, procyanidins, theobromines, etc., and vitamins and minerals) that positively modulate the immune system of human beings. It confers safeguards against cardiovascular diseases, certain types of cancers, and other brain-related disorders like Alzheimer’s disease, Parkinson’s disease, etc.

how to make gluten-free chocolate chip cookies at home
STEP 1:
To make chocolate chip cookies at home first, prepare two medium-sized bowls. In one bowl, combine oat and coconut flour, baking powder, baking soda, salt, cinnamon, and gingerbread spice mix and stir gently to combine.
In a second bowl, combine soy drink, oil, and sugar. Use a whisk to mix and combine everything thoroughly.
STEP 2:
Combine dry ingredients and wet mixture and mix to combine. I like using my hands in that stage to feel the texture. You can use a spatula, spoon, or whatever you feel comfortable with.
Chop the dark chocolate and toasted almonds and put them in a bowl with the cookie batter. Then, combine everything.
STEP 3:
Prepare baking tray, line it with parchment paper and using spoon or ice cream scoop form cookies.
STEP 4:
Preheat the oven for 180 degrees Celcius and when it’s warm enough place your cookies in. Bake them for 15 minutes and after that time turn off the oven and let them stay there for another 10 minutes.
STEP 5:
Let your freshly made chocolate chip cookies cool down and enjoy this little treat!
