I love this simple sauce, made with only a few ingredients. I can have it every single day, to every meal. Today, I will show you a trick on how to make the perfect green, herby sauce without over-mixing it. I would often mix yogurt with herbs and spices in a blender, but this caused the yogurt to become watered down; herbs needed to be blended thoroughly; in general, it could have been better. Another way was to chop fresh herbs and add to a yogurt, but still, it wasn’t that smooth, so I had to find another way.

how to make Creamy Parsley Yogurt Dipping Sauce; step-by-step

STEP 1:

Put two full cups of chopped parsley and dill in a high-speed blender. Add about 3/4 cup of oil and 1/4 cup of water. Blend it until smooth texture. The important thing here is to make sure herbs are fully chopped-blended. It should look like a pesto. It will improve the final taste experience where you will not feel a big piece of chopped herbs in that sauce and add such a beautiful green color.

  • 3/4 cup olive oil (or rapeseed oil, for a neutral taste)
  • 1/4 cup water
  • 2 big size garlic cloves
  • 1/2 heaped tsp salt
  • 1/4 heaped tsp herbal pepper (you can use black or cayenne pepper, but I would put less than that.)
  • 2 350g plain yogurts (Soy for plant-based/full-fat Greek yogurt for vegetarians.)
