I don’t know about you, but I love September. Whenever it comes, it feels like something new is happening. I got used to that feeling when starting a new school year when I was younger—preparing for new school experiences by buying new notes, pens, clothes, and backpacks.

Pumpkin is a tremendously important part of the autumn season. The amount of things you can make out of pumpkin is endless. Suitable for sweet, savory spreads, baking, desserts, and more. Seasonal eating is probably the best way. Whenever there is a season for particular fruits or vegetables, we should consume them the most or prepare something using specific methods for later. When we have pumpkin season, we should use it for so many things and enjoy it the most.

Everything you need to prepare smoky roasted pumpkin

FOR ROASTING

  • Pumpkin (hokkaido is the best)
  • Corn starch
  • Olive oil
  • Smoked paprika
  • Provencal seasoning
  • Salt

FOR TAHINI DRESSING

  • Tahini paste
  • Lemon juice
  • Salt
  • water
  • Honey/ maple syrup

how to make smoky roasted pumpkin step-by-step

STEP 1:

Preheat the oven to 200 degrees Celcius. Wash the pumpkin, dry it with kitchen paper or towel, clean the seeds from the pumpkin thoroughly, and cut it into wedges or cubes if desired.

STEP 2:

Put pumpkin wedges in a medium-sized mixing bowl and coat them with cornstarch. Make sure every part is thoroughly covered.

STEP 3:

In a small bowl, combine oil and spices (olive oil, salt, smoked paprika, provencal seasoning) and then add to a bowl with pumpkin. Massage with your hands to coat the pumpkin with spices and oil.

STEP 4:

Prepare a baking tray lined with parchment paper. Put gently pumpkin on a tray so they do not touch each other. Bake it for 20 minutes until the pumpkin is getting nicely caramelized. When the pumpkin is baked thoroughly, turn the oven off and let it cool down. Prepare tahini sauce.

How to make tahini sauce for roasted pumpkin

STEP 1:

Combine all ingredients in a bowl and whisk until you get a smooth and creamy consistency. You can add fresh garlic to it. It will be a tremendous spicy touch to it. The prepared sauce is used as a dressing for a roasted pumpkin.

  • 600 g pumpkin (hokkaido works best)

  • 1 heaped tsp smoked paprika
  • 1 tsp provencal seasoning
  • 1 tsp salt

Tahini sauce

  • 100 g tahini paste (smooth and liquidy)
  • 1 lemon (juice)
  • 1/2 tsp salt
  • 100 ml water
  • 1/2 tsp Honey/maple syrup
