Everything you need to prepare smoky roasted pumpkin
FOR ROASTING
- Pumpkin (hokkaido is the best)
- Corn starch
- Olive oil
- Smoked paprika
- Provencal seasoning
- Salt
FOR TAHINI DRESSING
- Tahini paste
- Lemon juice
- Salt
- water
- Honey/ maple syrup
how to make smoky roasted pumpkin step-by-step
STEP 1:
Preheat the oven to 200 degrees Celcius. Wash the pumpkin, dry it with kitchen paper or towel, clean the seeds from the pumpkin thoroughly, and cut it into wedges or cubes if desired.
STEP 2:
Put pumpkin wedges in a medium-sized mixing bowl and coat them with cornstarch. Make sure every part is thoroughly covered.
STEP 3:
In a small bowl, combine oil and spices (olive oil, salt, smoked paprika, provencal seasoning) and then add to a bowl with pumpkin. Massage with your hands to coat the pumpkin with spices and oil.
STEP 4:
Prepare a baking tray lined with parchment paper. Put gently pumpkin on a tray so they do not touch each other. Bake it for 20 minutes until the pumpkin is getting nicely caramelized. When the pumpkin is baked thoroughly, turn the oven off and let it cool down. Prepare tahini sauce.
How to make tahini sauce for roasted pumpkin
STEP 1:
Combine all ingredients in a bowl and whisk until you get a smooth and creamy consistency. You can add fresh garlic to it. It will be a tremendous spicy touch to it. The prepared sauce is used as a dressing for a roasted pumpkin.
